Our Story

Founded in 2020 by Chef Rubato, our restaurant was born from a desire to create a dining experience that harmonizes classical techniques with contemporary creativity. The name "Rubato" comes from the musical term signifying expressive freedom within a structured composition — a perfect metaphor for our culinary approach.

After years of training in prestigious kitchens across Europe and Asia, Chef Rubato returned to Singapore with a vision: to create a restaurant that honors exceptional ingredients through thoughtful preparation, beautiful presentation, and warm hospitality.

Our Philosophy

At Rubato, we believe that dining should engage all the senses and evoke emotion. Every dish tells a story, whether inspired by Chef Rubato's travels, childhood memories, or the exceptional quality of a seasonal ingredient.

Our Space

Located in a beautifully restored shophouse on Keong Saik Road, our dining room blends heritage architecture with contemporary design. The intimate 40-seat space features an open kitchen, allowing guests to witness the precision and artistry that goes into each dish.

We also offer a private dining room for special occasions and a Chef's Table experience for those seeking a more interactive culinary journey.
